Recently
my 16 month old granddaughter was ill with the stomach flu and a bad case of
diarrhea so we put her on the brat diet.
If you haven’t heard of the BRAT diet it is bandannas, rice, applesauce,
and toast. Luckily she isn't a very
picky eater but rice is one of the things she dislikes so I was talking to her
mom about what else to do instead because the other stuff isn't as filling for
bed time. She mentioned that she had once made BRAT pancakes for some of her
younger siblings, who were picky eaters and that they ate them without any
fussin! So this is how I made mine.
Ingredients
Pancake
mix (I make my own whole wheat mix)
½
cup mashed up banana
½ cup plus 2 tbsp applesauce (I did put cinnamon in mine)
½
cup cooked rice (I put a little bit of ground ginger in the water I cooked the
rice in)
I
left out the oil that the recipe calls for but I did add the egg.
Mix
all ingredients and cook on a griddle using pam instead of oil or butter.
My
batter came out a lot thicker than the traditional recipe does so I did have to
cook them longer.
My
granddaughter liked them so much she was eating them without syrup or butter
which is what you want!
Note
My
Pancake mix calls for 1 cup mix, 1 cup milk, 1 egg and 2 tablespoons oil, I
replaced the liquid with the bananas and applesauce plus a little extra applesauce
to replace the oil.
